Creamy Stuffed Chicken with Mozzarella, Roasted Red Peppers & Sautéed Spinach




A comforting, flavorful, and elegant dish — perfect for a cozy dinner or a weekend meal. Tender chicken breasts stuffed with melty mozzarella, roasted red peppers, and garlicky spinach, then seared and baked to perfection.


📝 Ingredients (Serves 4)

4 boneless, skinless chicken breasts

1 cup (250 ml) shredded mozzarella

½ cup (120 ml) roasted red peppers, sliced

1 cup (250 ml) fresh spinach

2 tablespoons olive oil

2 garlic cloves, minced

½ teaspoon dried oregano

Salt & black pepper, to taste

Toothpicks or kitchen twine (to secure the chicken)


🔪 Instructions

  1. Preheat the Oven

Preheat to 190°C (375°F).

  1. Butterfly the Chicken

Slice each chicken breast horizontally, being careful not to cut all the way through.
Open them like a book.
Season inside and outside with salt, pepper, and oregano.

  1. Sauté the Spinach

In a skillet, heat 1 tbsp olive oil over medium heat.
Add garlic and spinach. Cook 2–3 minutes until wilted. Remove from heat.

  1. Stuff the Chicken

Fill each breast with sautéed spinach, roasted red pepper strips, and mozzarella.
Fold over and secure with toothpicks or kitchen twine.

  1. Sear the Chicken

Heat the remaining 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
Sear stuffed chicken breasts for 2–3 minutes per side, until golden brown.

  1. Bake to Finish

Transfer the skillet to the oven and bake for 18–22 minutes, or until internal temperature reaches 74°C (165°F).

  1. Rest & Serve

Let rest for 5 minutes.
Remove toothpicks or twine. Slice and serve.
