📝 Ingredients (Serves 4)
4 boneless, skinless chicken breasts
1 cup (250 ml) shredded mozzarella
½ cup (120 ml) roasted red peppers, sliced
1 cup (250 ml) fresh spinach
2 tablespoons olive oil
2 garlic cloves, minced
½ teaspoon dried oregano
Salt & black pepper, to taste
Toothpicks or kitchen twine (to secure the chicken)
🔪 Instructions
- Preheat the Oven
Preheat to 190°C (375°F).
- Butterfly the Chicken
Slice each chicken breast horizontally, being careful not to cut all the way through.
Open them like a book.
Season inside and outside with salt, pepper, and oregano.
- Sauté the Spinach
In a skillet, heat 1 tbsp olive oil over medium heat.
Add garlic and spinach. Cook 2–3 minutes until wilted. Remove from heat.
- Stuff the Chicken
Fill each breast with sautéed spinach, roasted red pepper strips, and mozzarella.
Fold over and secure with toothpicks or kitchen twine.
- Sear the Chicken
Heat the remaining 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
Sear stuffed chicken breasts for 2–3 minutes per side, until golden brown.
- Bake to Finish
Transfer the skillet to the oven and bake for 18–22 minutes, or until internal temperature reaches 74°C (165°F).
- Rest & Serve
Let rest for 5 minutes.
Remove toothpicks or twine. Slice and serve.
