Delightful Pear and Speculoos Parfait
Ingredients for the Pear and Speculoos Parfait
- 500 ml heavy cream
- 50g sugar
- 1 speculoos biscuit, crushed
- 2 ripe Williams pears
- Juice of 1 orange
- Ground cinnamon, for garnish
- Raw pear sticks, for decoration
These ingredients create a rich and creamy texture that perfectly complements the fruity flavor of the pears. Each layer brings a different texture, making the parfait not only delicious but visually appealing as well.
Preparation Steps for the Parfait
Step 1: Making the Whipped Cream
First, whip the heavy cream, sugar, and 1 crushed speculoos biscuit using your Nutribaby(+) appliance until you achieve a creamy and airy chantilly. Be careful not to overmix; otherwise, you may end up with butter instead of whipped cream.
Step 2: Preparing the Pear Coulis
Next, peel, core, and chop the Williams pears into cubes. Steam the pears for 15 minutes without adding any sugar. Once done, blend half of the cooked pears with the juice of 1 orange to create a smooth coulis.
Chef’s Plating Tip:
To assemble the parfait, start by layering a spoonful of pear coulis at the bottom of a glass. Next, add a sprinkle of ground cinnamon, followed by a layer of the cooked pear brunoise (small cubes). Top this layer with the whipped cream and finish with the crushed speculoos on top. For a touch of elegance, you can add raw pear sticks for decoration. This will create a beautiful presentation that is as enjoyable to look at as it is to eat.
