When the eggplant is cooked, run it under cold water to cool it down so you can handle it without burning yourself. Then, slice it open and scrape out all the flesh.
Place the flesh in a bowl, drizzle a few drops of lemon juice over it, add a tiny pinch of salt, and mash it well with a fork until you achieve a smooth puree. Sprinkle the chopped lamb over it.
