Filipino-Inspired Pork Party Ribs Recipe

What are Party Ribs?
Party ribs refer to ribs that are cut into individual bones and then smoked. In 2022, I developed a recipe for party ribs, and since then, the concept has gained immense popularity. Much like traditional pork ribs, whether you prefer fall-off-the-bone smoked 3-2-1 ribs or hot and fast ribs, you can customize the seasoning and sauce to unleash your creativity.
What Makes These Ribs Filipino-Inspired?
Filipino BBQ typically incorporates chicken thighs or pork pieces marinated in a special BBQ sauce crafted with banana sauce, brown sugar, soy sauce, citrus, and lemon-lime soda. Inspired by this sauce, I recreated the flavor profile for these party ribs.

Ingredients
- Pork Ribs: Choose either spare ribs or St. Louis style ribs.
Rub Ingredients
- Brown Sugar: I recommend dark brown sugar for a richer flavor.
- SPG: A blend of salt, pepper, and garlic.
- Achiote: This spice blend is made from annatto seeds and includes varying ingredients from brand to brand, typically salt, garlic, and MSG.
- Ground Ginger
- Cayenne
Spritz Ingredients
- Soy Sauce
- White Vinegar
- Lemon-Lime Soda
Sauce Ingredients
- Banana Sauce: This sauce resembles ketchup and is red but is made from bananas mashed alongside sugar, vinegar, and spices. Surprisingly, it does not taste like bananas at all.
- Soy Sauce
- Dark Brown Sugar
- Lime Juice: Freshly squeezed is preferred.
- Orange Juice: Best if freshly squeezed from mandarin oranges.
- Granulated Garlic
- Fresh Garlic
- Kosher Salt
- Black Pepper
- Cayenne Pepper
Substitutions: If banana sauce is unavailable, regular ketchup can be used. Instead of citrus juice, calamansi juice can be substituted for a more authentic flavor, though it’s harder to find.

How to Smoke Filipino Pork Ribs
Start by preheating your grill or smoker to 300°F degrees with an indirect heat zone.
- STEP ONE: Remove the membrane from the back of the ribs, then cut between the bones to create individual pieces.

- STEP TWO: In a small bowl, mix all the rub ingredients then thoroughly apply the seasoning to all sides of the ribs.
- STEP THREE: Combine the spritz ingredients in a spray bottle.
- STEP FOUR: Position the ribs bones down on the preheated smoker over indirect heat. Smoke for 90 minutes, spritzing every 20 to 30 minutes.

- STEP FIVE: While the ribs smoke, combine all sauce ingredients in a pot and let it simmer for 15 minutes.
- STEP SIX: After smoking for 90 minutes, generously brush the ribs with sauce on all sides. Cook for an additional 15 minutes, reapplying sauce, and then cook for a final 15 minutes.

PRO TIP: For truly tender ribs, your internal temperature should reach at least 208°F. Use an instant-read thermometer to check the temperature by inserting it horizontally into the meat.
- STEP SEVEN: Once the ribs are tender, remove them from the grill and brush them with warm sauce one more time; garnish with sliced green onions.

How to Serve Party Ribs
The name “party ribs” says it all. Arrange them on a large platter and don’t forget to have extra sauce and a stack of napkins on hand. Everyone will enjoy digging in at your next gathering or tailgate!

Storage Tips
Any leftover ribs can be stored in an airtight container, such as a zip-top bag, in the refrigerator for up to five days. To reheat, place them on a plate, cover with a damp paper towel, and microwave until warmed through.
